Our goal is to provide our customers with quality traditional Czech dishes with a modern twist so that not only do our customers enjoy the food, but also the experience. We only use the latest culinary equipment and cook according to traditional recipes, whose creation was supervised by Mr. Julius Dubovský, a former chairman of the National Association of Chefs and Confenctioners.
In each of our restaurants, you can enjoy the "classics" bearing the names of the main characters from the novel The Good Soldier Svejk such as Sirloin In Vegetable Cream Sauce by Mrs. Muller, Goulash by Feldkurat Katz, Delicacy by Oberleutnant Makovec or according to a name of a renowned gourmand, Baloun’s Chow.
The restaurant has pioneered the project called Czech Specials, the trademark of quality Czech cuisine. As part of a nationwide competition Czech Specials held at Trojský zámek, two pilot projects Švejk restaurant "U Zeleného stromu" in Nepomuk and "U Pětatřicátníků" In Pilsen, ranked first according to the assessment of the public and third place according to the assessment of the jury in the category Czech restaurant of the year 2014. Both pilot restaurants ranked first according to the jury in the contest West Bohemian Restaurant of The Year.
Selected Švejk restaurants also regularly hold gastronomic series called " Monarchy’s appetite" which bring back the very cuisine of the AustroHungarian Empire. These events include St. Martin's feast, game feast, pig-slaughtering feast, beef feast, St. Havel’s feast, the cuisine of Moravia, Silesia, The Kingdom of Hungary and so on.
